Ingredients:
- 4 boneless, skinless chicken breasts
- 1/2 cup unsalted butter, softened
- 2 cloves garlic, minced
- 1 tbsp chopped fresh parsley
- 1 tbsp chopped fresh chives
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- Non-stick cooking spray
Instructions:
- Preheat your air fryer to 400°F (200°C).
- Cut a pocket in each chicken breast by slicing horizontally through the thickest part of the breast, being careful not to cut all the way through.
- In a small mixing bowl, combine the butter, garlic, parsley, chives, salt, and pepper. Mix well.
- Divide the butter mixture evenly among the chicken breasts, spooning it into the pocket of each breast. Use toothpicks to seal the pocket shut.
- Put the flour, beaten eggs, and panko breadcrumbs into three separate shallow bowls.
- Dip each chicken breast into the flour, then the egg, and finally the panko, making sure the chicken is well-coated with each.
- Spray the air fryer basket with non-stick cooking spray.
- Place the chicken breasts in the air fryer basket and cook for 20-25 minutes, or until the chicken is cooked through and the coating is golden brown and crispy.
