Butterfly lobster tails. To begin, cut the upper hard shell of the lobster tail lengthwise down the middle with kitchen shears. Do not cut all the way to the bottom of the shell. Discard the shells. Carefully remove the meat from the shell with your fingers and place on top. Be sure to remove veins and visible dirt.
Prepare the garlic butter mixture. Melt the butter in a small saucepan over medium-low heat, then add the garlic, spices, lemon juice and fresh parsley. Pour half of the mixture onto a small plate and set aside for later.
Cook the lobster. Season the lobster to taste with salt and pepper. (You can also season with a little smoked paprika and oregano, about 1/4 teaspoon each.) Then brush BOTH SIDES of the lobster with the lemon-garlic butter sauce.
Then place the lobster in the fryer. Bake at 380°F for 4 minutes. Then brush the lobster meat with the garlic butter sauce and cook for another 2-4 minutes. Lobster is white, golden and tender when cooked. To serve. Serve the lobster with fresh lemon wedges and the reserved lemon-garlic butter sauce.
How Do You Cook Lobster Tails So They Are Tender?
For best results, be sure not to overcook any fish. If you are cooking a typical 4-6oz lobster tail in the deep fryer, it is important to cook for 6-8 minutes and be sure to cook halfway through (the lobster is fully cooked when the lobster meat is opaque/white). This ensures that the lobster is cooked to perfection. It will be juicy, tender and incredibly tasty.
How Can You Tell When Lobster Tails Are Done?
The lobster tail is done when the meat is no longer bright red/pink and is more opaque (white) and soft. A thermometer inserted into the thickest part of the lobster meat should read 140-145°F when fully cooked.
How To Cook Lobster Tails In the Oven?
If you don’t have a deep fryer, you can cook your lobster tail in the oven. Just preheat the oven to bake. Then place the lobster on a baking sheet and cook for 5-10 minutes, basting halfway through cooking.
