I love them so much that I make them often. Sriracha adds almost no heat (mostly flavor), so don’t worry about spiciness. For overall crispiness, I usually cook the thighs on a rack set in a foil-lined half pan. And don’t skip the sugar because it helps the coating stick to the chicken. By the way, Kellogg’s® Corn Flakes® are usually sold in supermarkets near the breadcrumbs and breading mixes, not in the cereal aisle.

Baked chicken thighs coated with cornflake crumbs is a simple yet delicious dish that’s perfect for a weeknight dinner or a family gathering. Here’s a recipe you can follow:


  • 6 bone-in, skin-on chicken thighs
  • 2 cups corn flakes
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 2 eggs, beaten
  • Cooking spray


  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.
  2. In a food processor, pulse the corn flakes until they’re finely crushed. Add paprika, garlic powder, onion powder, salt, and black pepper. Pulse a few more times to combine the spices with the cornflakes.
  3. Spread the flour on a plate. In a separate shallow bowl, beat the eggs.
  4. Coat each chicken thigh in flour, shaking off any excess. Then dip each thigh in the beaten egg, making sure it’s fully coated.
  5. Roll each thigh in the cornflake mixture, pressing the crumbs onto the chicken to make sure they adhere.
  6. Place the chicken thighs on the prepared baking sheet, skin-side up.
  7. Spray the chicken lightly with cooking spray to help the coating crisp up in the oven.
  8. Bake for 40-45 minutes, or until the chicken is cooked through and the coating is golden brown and crispy.
  9. Let the chicken rest for a few minutes before serving. Enjoy!

This recipe serves six people, but you can adjust the ingredients based on how many people you’re serving.
