Quick and Easy Dinners for One
Baked Halibut with Crispy Panko
Ingredients:
- 4 halibut fillets
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 1/2 cups panko breadcrumbs
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper
- Olive oil cooking spray
- Lemon wedges, for serving
Instructions:
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper and spray with cooking spray.
- In a shallow bowl, mix the flour, garlic powder, paprika, salt, and pepper.
- In another shallow bowl, beat the eggs.
- In a third shallow bowl, mix the panko breadcrumbs.
- Pat the halibut fillets dry with paper towels.
- Dredge each fillet in the flour mixture, shaking off any excess.
- Dip each fillet in the beaten eggs, then coat in the panko breadcrumbs.
- Place the fillets on the prepared baking sheet and spray lightly with olive oil cooking spray.
- Bake for 15-20 minutes, or until the halibut is cooked through and the panko is golden brown and crispy.
- Serve with lemon wedges on the side.
