Baked Italian chicken dinner is a delicious and easy-to-make dish that is perfect for a family dinner or entertaining guests. Here’s a recipe to get you started:

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a shallow bowl, mix together the flour, salt, and black pepper. Dredge the chicken breasts in the flour mixture and shake off any excess.
  3. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook until browned on both sides, about 3 minutes per side.
  4. Remove the chicken from the skillet and set it aside. Add the onion and garlic to the skillet and cook until the onion is translucent, about 5 minutes.
  5. Add the diced tomatoes, oregano, basil, thyme, red pepper flakes, and chicken broth to the skillet. Bring the mixture to a simmer and cook for 5 minutes.
  6. Pour the tomato mixture into a baking dish. Arrange the chicken breasts on top of the tomato mixture.
  7. Cover the baking dish with foil and bake for 25 minutes.
  8. Remove the foil from the baking dish and sprinkle the Parmesan cheese over the chicken. Bake for an additional 5 minutes, or until the cheese is melted and the chicken is cooked through.
  9. Garnish with chopped fresh parsley before serving.
