These easy mac and cheese make for a quick meal. A friend of mine sent me this recipe when I got my first apartment because she knew I hated cooking! It’s very easy, even I can do it, and it’s delicious. I don’t know where you got that recipe.

Sure, here’s a recipe for Baked Macaroni and Cheese with Chicken:

Ingredients:

  • 1 lb elbow macaroni
  • 2 cups cooked, shredded chicken
  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 2 cups whole milk
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup breadcrumbs

Instructions:

  1. Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish with non-stick cooking spray.
  2. Cook the elbow macaroni according to package instructions until al dente, then drain and set aside.
  3. In a saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for 1-2 minutes, stirring constantly.
  4. Gradually add the whole milk, whisking constantly to avoid lumps. Cook the sauce for about 5 minutes, or until it has thickened.
  5. Remove the saucepan from heat and add the shredded cheddar and Parmesan cheese, garlic powder, onion powder, salt, and black pepper. Stir until the cheese has melted and the sauce is smooth.
  6. Add the cooked macaroni and shredded chicken to the cheese sauce, stirring until the macaroni is coated evenly.
  7. Pour the macaroni and cheese mixture into the prepared baking dish.
  8. In a separate bowl, mix the breadcrumbs with 1 tablespoon of melted butter. Sprinkle the breadcrumb mixture over the top of the macaroni and cheese.
  9. Bake the dish for 25-30 minutes, or until the top is golden brown and the cheese is bubbly.
  10. Let the macaroni and cheese cool for a few minutes before serving. Enjoy!
