Ingredients:
- 8 oz. penne pasta
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tbsp. Cajun seasoning
- 2 tbsp. olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- Salt and pepper, to taste
- Fresh parsley, chopped (optional)
Instructions:
- Cook the penne pasta according to the package instructions until al dente. Drain and set aside.
- In a large bowl, toss the chicken with Cajun seasoning until coated evenly.
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes, or until browned and cooked through.
- Remove the chicken from the skillet and set aside. In the same skillet, add the sliced bell peppers, onion, and garlic. Cook for 3-4 minutes, or until the vegetables are tender.
- Add the heavy cream and chicken broth to the skillet. Stir to combine and bring the mixture to a simmer. Cook for 5-7 minutes, or until the sauce has thickened.
- Return the chicken to the skillet and stir to combine with the sauce. Season with salt and pepper to taste.
- Serve the Cajun Chicken Pasta hot, topped with fresh parsley if desired.
