Chicken, Sausage, Peppers, and Potatoes Recipe
Chicken, sausage and peppers are roasted with Yukon Gold potatoes in a very hot oven until nicely caramelized. You’ll need a large, sturdy roasting pan (or a smaller one) for this delicious dish.
Chicken Sausage Peppers and Potatoes is a delicious and healthy one-pan meal that’s easy to make and perfect for busy weeknights. Here’s a simple recipe that serves 4-6 people:
Ingredients:
- 4-6 chicken sausages
- 4-5 medium potatoes, peeled and cut into small cubes
- 1 large red bell pepper, sliced
- 1 large yellow onion, sliced
- 2-3 cloves of garlic, minced
- 1 teaspoon dried thyme
- Salt and black pepper, to taste
- 2 tablespoons olive oil
- Chopped fresh parsley, for garnish
Instructions:
- Preheat the oven to 400°F (200°C).
- In a large mixing bowl, toss the potatoes with 1 tablespoon of olive oil, thyme, salt, and black pepper.
- Spread the potatoes in a single layer on a large baking sheet and bake for 20-25 minutes, or until the potatoes are golden brown and crispy.
- While the potatoes are cooking, heat the remaining olive oil in a large skillet over medium-high heat. Add the sliced onions and bell peppers and sauté for 3-4 minutes, or until they are soft and slightly caramelized.
- Add the minced garlic to the skillet and cook for an additional 1-2 minutes.
- Push the vegetables to one side of the skillet and add the chicken sausages. Cook the sausages for 5-7 minutes, or until they are browned on all sides.
- Mix the vegetables and sausages together in the skillet, and then transfer everything to the baking sheet with the potatoes.
- Return the baking sheet to the oven and cook for an additional 10-15 minutes, or until the sausages are fully cooked and the peppers are slightly charred.
- Garnish with chopped parsley and serve hot.
