Chicken Sausage Peppers and Potatoes is a delicious and healthy one-pan meal that’s easy to make and perfect for busy weeknights. Here’s a simple recipe that serves 4-6 people:


  • 4-6 chicken sausages
  • 4-5 medium potatoes, peeled and cut into small cubes
  • 1 large red bell pepper, sliced
  • 1 large yellow onion, sliced
  • 2-3 cloves of garlic, minced
  • 1 teaspoon dried thyme
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • Chopped fresh parsley, for garnish


  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, toss the potatoes with 1 tablespoon of olive oil, thyme, salt, and black pepper.
  3. Spread the potatoes in a single layer on a large baking sheet and bake for 20-25 minutes, or until the potatoes are golden brown and crispy.
  4. While the potatoes are cooking, heat the remaining olive oil in a large skillet over medium-high heat. Add the sliced onions and bell peppers and sauté for 3-4 minutes, or until they are soft and slightly caramelized.
  5. Add the minced garlic to the skillet and cook for an additional 1-2 minutes.
  6. Push the vegetables to one side of the skillet and add the chicken sausages. Cook the sausages for 5-7 minutes, or until they are browned on all sides.
  7. Mix the vegetables and sausages together in the skillet, and then transfer everything to the baking sheet with the potatoes.
  8. Return the baking sheet to the oven and cook for an additional 10-15 minutes, or until the sausages are fully cooked and the peppers are slightly charred.
  9. Garnish with chopped parsley and serve hot.
