Ingredients:
- 1 lb. fresh chorizo sausage
- 1/2 white onion, chopped
- 1/4 cup chopped fresh cilantro
- 12 small corn tortillas
- 1 lime, cut into wedges
Instructions:
- Remove the chorizo from its casing and place it in a large skillet over medium heat. Cook, breaking up the sausage with a spoon, until it’s browned and cooked through, about 8-10 minutes.
- While the chorizo is cooking, warm the tortillas in a dry skillet over medium-high heat. Cook for about 30 seconds on each side, until they’re heated through and slightly toasted.
- Once the chorizo is fully cooked, remove the skillet from the heat and add the chopped onion and cilantro. Stir to combine.
- To assemble the tacos, place a spoonful of the chorizo mixture onto each tortilla. Squeeze a wedge of lime over each taco.
