Ingredients:

  • 1 lb pork tenderloin, sliced into 1-inch pieces
  • 2 tbsp olive oil
  • 1 medium acorn squash, peeled and diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the sliced pork tenderloin with 1 tablespoon of olive oil and season with salt and pepper.
  3. In a large oven-safe skillet or baking dish, heat the remaining tablespoon of olive oil over medium heat. Add the diced onion and sauté for 2-3 minutes until softened.
  4. Add the minced garlic and sauté for another minute until fragrant.
  5. Add the diced acorn squash to the skillet and stir to combine with the onions and garlic.
  6. Season the squash mixture with dried thyme, dried rosemary, salt, and pepper to taste.
