Here is a simple and delicious recipe for Sheet Pan Greek Chicken:
- 4 boneless, skinless chicken breasts
- 1 red onion, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1/2 cup pitted Kalamata olives
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tbsp dried oregano
- 1 tsp garlic powder
- Salt and pepper, to taste
- Lemon wedges, for serving
- Preheat your oven to 400°F (200°C).
- In a small bowl, whisk together the olive oil, red wine vinegar, oregano, garlic powder, salt, and pepper.
- On a large sheet pan, arrange the chicken breasts and vegetables, making sure everything is evenly distributed. Pour the dressing over the chicken and vegetables, and toss to coat.
