Greek Lemon Chicken and Potatoes is a classic and delicious Greek dish that is easy to make and full of flavor. Here’s a recipe you can try at home:

Ingredients:

  • 4 chicken thighs (bone-in, skin-on)
  • 4 large potatoes, peeled and cut into wedges
  • 1/2 cup extra virgin olive oil
  • 1/3 cup fresh lemon juice
  • 3 cloves of garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon, sliced
  • 1/4 cup chicken broth

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, whisk together the olive oil, lemon juice, garlic, oregano, thyme, salt, and black pepper.
  3. In a large baking dish, arrange the chicken and potatoes in a single layer.
  4. Pour the olive oil mixture over the chicken and potatoes, and toss to coat evenly.
  5. Place the lemon slices on top of the chicken and potatoes.
  6. Pour the chicken broth around the edges of the baking dish.
  7. Bake for 50-60 minutes, or until the chicken is cooked through and the potatoes are tender and golden brown.
  8. Serve the chicken and potatoes hot, garnished with fresh herbs or additional lemon slices if desired.
