Ingredients:
- 4 chicken thighs (bone-in, skin-on)
- 4 large potatoes, peeled and cut into wedges
- 1/2 cup extra virgin olive oil
- 1/3 cup fresh lemon juice
- 3 cloves of garlic, minced
- 1 tablespoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 lemon, sliced
- 1/4 cup chicken broth
Instructions:
- Preheat the oven to 375°F (190°C).
- In a small bowl, whisk together the olive oil, lemon juice, garlic, oregano, thyme, salt, and black pepper.
- In a large baking dish, arrange the chicken and potatoes in a single layer.
- Pour the olive oil mixture over the chicken and potatoes, and toss to coat evenly.
- Place the lemon slices on top of the chicken and potatoes.
- Pour the chicken broth around the edges of the baking dish.
- Bake for 50-60 minutes, or until the chicken is cooked through and the potatoes are tender and golden brown.
- Serve the chicken and potatoes hot, garnished with fresh herbs or additional lemon slices if desired.
