Ingredients:

  • 4 salmon fillets
  • 1/2 cup panko breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons Dijon mustard
  • 1 lemon, zested and juiced

Instructions:

  1. Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  2. In a small bowl, combine the panko breadcrumbs, parmesan cheese, thyme, salt, and black pepper.
  3. In another small bowl, whisk together the olive oil, Dijon mustard, lemon zest, and lemon juice.
  4. Brush the mustard mixture over the top of each salmon fillet.
  5. Press the panko mixture onto the top of each fillet, pressing firmly to make sure it adheres.
  6. Place the salmon fillets onto the prepared baking sheet.
