Ingredients:
- 4 salmon fillets
- 1/2 cup panko breadcrumbs
- 1/4 cup grated parmesan cheese
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 2 tablespoons Dijon mustard
- 1 lemon, zested and juiced
Instructions:
- Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
- In a small bowl, combine the panko breadcrumbs, parmesan cheese, thyme, salt, and black pepper.
- In another small bowl, whisk together the olive oil, Dijon mustard, lemon zest, and lemon juice.
- Brush the mustard mixture over the top of each salmon fillet.
- Press the panko mixture onto the top of each fillet, pressing firmly to make sure it adheres.
- Place the salmon fillets onto the prepared baking sheet.
- Bake the salmon for 12-15 minutes, or until the crust is golden brown and the salmon is cooked through.
