Sauteed Shrimp with Spinach

Here’s a recipe for sauteed shrimp with spinach that serves 4 people:

Ingredients:

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 6 cups baby spinach leaves
  • 1/4 cup chicken or vegetable broth
  • Salt and pepper, to taste
  • Lemon wedges, for serving

Instructions:

  1. Heat a large skillet over medium-high heat. Add the olive oil and swirl to coat the pan.
  2. Add the minced garlic and red pepper flakes (if using) and cook for 30 seconds, until fragrant.
  3. Add the shrimp to the pan and cook for 2-3 minutes on each side, until pink and cooked through. Remove the shrimp from the pan and set aside.
  4. Add the chicken or vegetable broth to the pan and stir to scrape up any browned bits from the bottom of the pan.
  5. Add the spinach leaves to the pan and cook for 1-2 minutes, until wilted.
  6. Return the shrimp to the pan and toss with the spinach and broth. Cook for another minute or two, until heated through.
  7. Season with salt and pepper, to taste.
  8. Serve the sauteed shrimp and spinach with lemon wedges on the side.
