Scrambled Eggs with Chorizo Recipe

This chorizo and egg dish is an appetizing breakfast with spicy flavors. My Mexican husband taught me this easy and delicious recipe for two people and I don’t use more than 6 eggs for the two of us. You can use less or more, it doesn’t matter.

Scrambled eggs with chorizo is a delicious and easy breakfast dish that is popular in many parts of the world. Here’s a recipe to make it at home:

Ingredients:

  • 4 large eggs
  • 1/2 cup of diced chorizo sausage
  • 1/4 cup of diced onion
  • 1/4 cup of diced bell pepper
  • 1 tablespoon of butter or olive oil
  • Salt and pepper to taste
  • Optional garnish: chopped cilantro, sliced avocado, shredded cheese

Instructions:

  1. In a non-stick skillet over medium heat, cook the chorizo for about 5 minutes, stirring occasionally, until browned and crispy. Remove the chorizo from the skillet with a slotted spoon and set it aside, leaving the oil in the skillet.
  2. Add the onion and bell pepper to the skillet and cook for about 3 minutes, stirring occasionally, until softened.
  3. In a bowl, whisk the eggs until well beaten. Season with salt and pepper.
  4. Add the butter or olive oil to the skillet with the onion and bell pepper. Once melted, pour the eggs into the skillet.
  5. Stir the eggs continuously with a spatula until they start to set. Then add the cooked chorizo back into the skillet and continue stirring until the eggs are fully cooked and fluffy.
  6. Serve immediately with your desired garnishes.
