Scrambled Eggs with Chorizo

Scrambled eggs with chorizo is a delicious and easy-to-make breakfast dish. Here’s a simple recipe that serves two people:

  • 4 large eggs
  • 1/4 pound chorizo, casings removed and diced
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Chopped fresh cilantro (optional)


  1. Crack the eggs into a mixing bowl and whisk them until they are well beaten. Season with salt and pepper to taste.
  2. In a large non-stick skillet, melt the butter over medium heat. Add the diced chorizo and cook for 3-4 minutes, stirring occasionally, until it’s browned and crispy.
  3. Add the beaten eggs to the skillet and stir them continuously with a spatula. Cook the eggs for 2-3 minutes, or until they are scrambled and cooked through.
  4. Divide the scrambled eggs with chorizo between two plates, and sprinkle with chopped cilantro, if desired.
