- 4 salmon fillets
- 2 red bell peppers, sliced
- 2 yellow bell peppers, sliced
- 1 red onion, sliced
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 2 teaspoons dried thyme
- 2 teaspoons garlic powder
- Lemon wedges, for serving
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Place the salmon fillets on the baking sheet, skin-side down.
- In a bowl, mix together the sliced bell peppers, red onion, olive oil, salt, pepper, thyme, and garlic powder.
- Spread the mixture over the salmon fillets.
- Roast the salmon and peppers in the oven for 15-20 minutes, or until the salmon is cooked through and the peppers are tender.
- Serve the salmon and peppers hot with lemon wedges on the side.
