Tomato Basil Salmon Recipe

Ingredients:

  • 4 salmon fillets (about 6 oz each)
  • 1 pint cherry tomatoes, halved
  • 1/4 cup chopped fresh basil
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix together the cherry tomatoes, basil, garlic, olive oil, salt, and pepper.
  3. Place the salmon fillets skin-side down in a baking dish. Spoon the tomato mixture over the top of each fillet, pressing down slightly to adhere the tomatoes to the fish.
  4. Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
