  • 1 lb. chorizo sausage, casings removed
  • 8 small corn tortillas
  • 1/2 white onion, diced
  • 1/2 cup fresh cilantro leaves, chopped
  • 1 lime, cut into wedges
  • Optional toppings: crumbled queso fresco, sliced avocado, hot sauce


  1. Heat a large skillet over medium-high heat. Add the chorizo and cook, breaking it up into small pieces with a wooden spoon, until browned and cooked through, about 10-12 minutes.
  2. While the chorizo is cooking, warm the tortillas by wrapping them in foil and placing them in a 350°F oven for 5-7 minutes.
  3. Once the chorizo is cooked, remove it from the skillet with a slotted spoon and transfer it to a plate.
  4. In the same skillet, add the diced onion and cook until softened, about 3-5 minutes.
  5. To assemble the tacos, place a spoonful of chorizo on a warm tortilla and top with some of the sautéed onions and cilantro. Squeeze a lime wedge over the top and add any additional toppings, if desired.
  6. Repeat with the remaining tortillas and fillings.
