Ingredients:
- 1 lb. chorizo sausage, casings removed
- 8 small corn tortillas
- 1/2 white onion, diced
- 1/2 cup fresh cilantro leaves, chopped
- 1 lime, cut into wedges
- Optional toppings: crumbled queso fresco, sliced avocado, hot sauce
Instructions:
- Heat a large skillet over medium-high heat. Add the chorizo and cook, breaking it up into small pieces with a wooden spoon, until browned and cooked through, about 10-12 minutes.
- While the chorizo is cooking, warm the tortillas by wrapping them in foil and placing them in a 350°F oven for 5-7 minutes.
- Once the chorizo is cooked, remove it from the skillet with a slotted spoon and transfer it to a plate.
- In the same skillet, add the diced onion and cook until softened, about 3-5 minutes.
- To assemble the tacos, place a spoonful of chorizo on a warm tortilla and top with some of the sautéed onions and cilantro. Squeeze a lime wedge over the top and add any additional toppings, if desired.
